Weekly Menu

So, here it is, Sunday again -- I realize I didn't do very well posting recipes & reviews of this past week's meals. I promise I'll go back & do that ASAP. In the meantime, here's what we'll be eating this week...

Monday: steak & goat cheese salad
Tuesday: broiled salmon with rosemary, crash hot potatoes, roasted asparagus
Wednesday: turkey burgers served on a bed of lettuce, baked sweet potato fries, roasted broccoli
Thursday: kale & potato soup with turkey sausage
Friday: pork chops with maple apple acorn squash, garden salad
Saturday: GIRLS' NIGHT OUT!!! Ella & Hubby will have build-your-own pizzas
Sunday: turkey sweet potato shepherd's pie

What we're having for dinner this week

A few friends have recently recommended the Skinny Weight Watchers Recipe Blog and for some strange reason, it took me a few days to click on the link and check it out. I'm not sure what I was expecting but suffices to say, I was blown away. There are so many amazingly delicious looking recipes, many of which require very little-to-no modification for them to be safe for us to eat. I've worked a few new things into our menu this week and I'm very excited to try them out. Probably a little too excited. I was practically giddy in the grocery store this afternoon! It's easy to forget that you don't have to sacrifice flavor when your diet is so limited.

Tonight: beef stew
Monday: baked garlic lemon tilapia*, rosemary roasted potatoes & roasted broccoli
Tuesday: sofrito-marinated steak, sweet potatoes & sauteed brussels sprouts*
Wednesday: salmon on a bed of lentils
Thursday: garlic lime marinated pork chops*, cilantro lime quinoa*, sauteed zucchini julienne*
Friday: white bean turkey chili*, garden salad
Saturday: leftover turkey chili since we'll be at a bday party most of the day
Sunday: tuna salad sandwiches with avocado "mayonnaise" on GF vegan flatbread and some kind of variation on the escarole soup with turkey meatballs*. I'll have to tweak it quite a bit.

I'll try to post the recipes with my variations & reviews as I go along.

Keeping myself organized

I started off the New Year, like so many millions of other people, vowing to get more organized. Because so much of my life revolves around planning, preparing and shopping for meals these days, I realized that I need to get it down to a science. I'm busy chasing after an active toddler now and can't just go to the freezer at 5:30pm and try to pull something together. By that time, Ella's busy trying to climb the shelves of the pantry, ready to fend for herself. I found this cute meal planner/shopping list but couldn't justify spending the $8.99 + shipping to get 50 sheets of paper. So, instead, I used it as my inspiration and created my own in Excel.

I bought a memo-sized clipboard from Staples for $1.99; used some Mod Podge (that I had laying around from a previous project) and some fun paper that I got at the craft store for $0.41, to cover the boring brown clipboard; slapped some magnetic tape (also laying around from a previous project) on the back, hung it on my fridge & clipped on my menu planning/shopping list. The end result is almost as cute as my inspiration but much MUCH cheaper.

We're in the middle of the second week of having every dinner planned out & shopped for ahead of time. I'm breathing easier already!

What's gonna be on our plates this week?

I took another 9pm trip to the grocery store tonight to do the weekly grocery shopping. This week, I went off of what was on sale & planned the week's menu around what I bought.

Monday: We had pasta of varying sorts (buckwheat soba for me, rice pasta for Ella and whole wheat pasta for Hubby) with gluten-free turkey meatballs and "mock marinara" (made from beets and carrots). It was not a crowd pleaser. I didn't think the sauce was so bad but poor Hubby really struggled to get through it. Ella ate most of it then proceeded to throw the rest on the floor so it's hard to say what her true feelings were.

Tuesday: Beef stew w/the usual carrots, potatoes, etc. I'd love to serve this with a nice crusty bread but will have to settle for this, instead.

Wednesday: Herb roasted turkey breast, mashed potatoes and green beans. I was super psyched about the turkey breast -- it was on sale for $1.99/lb and it was the last one and had no price sticker so the manager gave it to me for $0.99/lb. Woot!

Thursday: Baked pork chops, maple-glazed roasted butternut squash and spinach sauteed in garlic & EVOO. Hubby is so NOT a squash fan so I'm hoping to entice him with the maple syrup glaze.

Friday: Having friends over for dinner & will serve Harvest Salad (delish! recipe to follow...), de-glutened & de-egged Thanksgiving Loaves, from my friend Meghan's blog and roasted sweet potatoes. Perhaps with a gluten-free, casein-free cranberry pear crisp for dessert... Mmmm!

Saturday: DATE NIGHT!!!! I'm a little too excited about this. We haven't been on a date with just the two of us in oh I don't know... 6 months?! Eating out is incredibly challenging when you have so many food sensitivities but I usually stick to steak or grilled fish with nothing on it and sides of steamed veggies with nothing on them. I find that a wedge of lemon (for fish) and a little S&P at the table is usually plenty of seasoning. Admittedly, not the most exciting way to go but I know it's safe to eat which makes it taste even better. The hard part will be going to the movies and avoiding the popcorn but I've got a plan... More on this later.

What's on our menu this week?

I'm trying very hard to get more organized. If I plan out our weekly menu ahead of time, I find that my week goes much more smoothly and I am more productive. There's nothing worse than standing in front of the freezer at 5:30pm, trying to pull together a meal that we can all eat while Ella's hanging off my leg, pointing frantically to her mouth (her baby sign for "hungry"). So here's what I came up with for this week:

Monday
gluten-free crispy tilapia
quinoa pilaf
wilted spinach with garlic & EVOO

Tuesday
hamburger & veggie crockpot meal
garden salad

Wednesday
eggless, gluten-free salmon burgers (no bun for me)
sweet potato fries
steamed broccoli

Thursday
gluten free meatloaf
rosemary roasted potatoes
steamed carrots

Friday
shrimp sauteed with potatoes
garden salad

Saturday (Halloween!)
grilled pork chops
barley something... TBD
roasted asparagus

Some of these are new recipes that I've come across and/or modified so if all goes well, I'll post them as the week goes on.
